It’s that time again…Apéritifs and Amuse Bouches! You don’t need to be fancy city folk to participate. Everyone is invited! Now, how about some lemony, creamy white bean dip alongside that glass of sparkling loveliness?
Last week I raved about the custom of apéritifs before a night out on the town. However, please know that you can employ these same practices at home. Before your own dinner for two or a dinner party with friends. It is merely the art of slowing down and sharing conversation and small bites before a meal. If you’re making dinner, it’s an excellent chance to get out of the kitchen and spend a little time with your beloved and friends. And get that palate primed!
Today’s “amuse bouche” to accompany your apéritif is a lemon-zesty white bean dip. It’s a new one in my repertoire and has been a big hit! So simple and actually good for you — you’re going to want to eat it any time of day. I absolutely love these five-ingredient dishes! Choose your favorite items and create new dishes with those same ingredients. Serve with crackers, bread or raw veggies — it’s delicious with everything. It doubles easily for larger parties (or when you’re particularly snacky…).
Lemon-Thyme White Bean Dip
1 can white beans
1 garlic clove
zest of 1 lemon
1 TBSP fresh thyme
salt and pepper
Drain and rinse the beans. (Note: I always use organic white beans. Dry beans soaked overnight are an excellent option but require a little more thought ahead!)
Add the beans and garlic to the food processor and begin to pulse. Slowly stream the olive oil in and check the consistency and flavor. More garlic? Sure. Add salt and pepper to taste.
Add the lemon zest (Note: Always wash your lemons before zesting!) and fresh thyme and mix in by hand. Garnish with a sprig of thyme and additional olive oil. I guarantee your guests will swoon.
