It’s amazing how many cultures incorporate bread and tomatoes into their recipes. They are both so simple and but can be twisted into something different with just a few ingredients. How about avocados? A little Mexican, a little Italian. Perfect!
I’m always looking for a little snack and usually keep avocados in the house. It’s a very good thing. A nice, ripe avocado mashed with a little onion, salt and lemon along with a few of the last of the summer’s tomatoes is right in my wheelhouse. And it takes no time at all. That’s the best kind of snack. I don’t mind putting effort into a meal but when I’m hungry and need a little bite, I want it now. I think you get it. So you can call these a fancy name like Guacamole Brushetta or Mashed Yummy Avocado Toasts or just tell it to get in your belly!
2 ripe avocados, mashed
1/4 C minced onion
1 ripe tomato, diced
pinch of salt and chili powder
drizzle of olive oil
a few leaves of cilantro
You can use any kind of bread you like. A nice thick ciabatta or boule-style bread would be excellent but if you just have sliced bread on hand, it will be just fine. This is a snack. If you love this enough to make as an appetizer, go get the special bread. Slice into nice thick pieces and toast in the oven for a few minutes on each side. If you love garlic, go ahead and rub a raw clove on the toasted bread. Since there are onions in the avocado, you may want to eliminate that step.
Mash the avocados in a shallow bowl. Add the minced onion and the salt and squeeze in the lemon and mix together. A pinch of chili powder is more authentic but anything spicy will do. Assemble the toasts and add the tomatoes and cilantro on top. A drizzle of olive oil may just hit the spot!
