This is a super simple salad that will make you look like a rock star. Wash, spin and tear the fresh greens. (Tip: Fabulous organic and fresh salad greens are becoming available at farmer’s markets now. They make such a difference in the quality of any salad.) Distribute into the four salad dishes. Slice or chop the tomatoes and scatter over the greens. (Tip: Heirloom tomatoes would elevate this salad to another level. Soon…they will be ready…) Slice the burrata ball in half and carefully place in the center of the greens. Sprinkle the pine nuts, throw a pinch of salt and freshly-ground pepper over the top and add the best olive oil you have on hand. (Tip: Purchasing top quality olive oil is an excellent way to make simple dishes great. It isn’t for every day cooking but to dip freshly baked bread or to add flavor to fresh pesto, etc.)
This is one posh salad! In fact, it was so well received in our house that we decided to make fancy sandwiches the next night. Again, it’s the same ingredients except we used a fresh Italian-style baguette. Warming the bread would make this even better! Lay the sliced tomatoes down, add the burrata and add the seasonings: salt, pepper and olive oil now. Top with the greens and cut in half. This will make those fresh mozzarella, tomato sandwiches taste boring!
