All your favorite burger toppings wrapped up in one spot? This delicious veggie burger wrap will make you forget about the meat!
As a vegetarian, I’m always on the hunt for something new. Meat eaters ask me again and again if I miss burgers. Not really. But there is nothing like a great burger topped with so many things you can barely get your mouth around it! Hmmm. I have an idea. Imagine my joy when I accidentally created one of my favorite dishes in a long time! Happy accident or not, this is quick, easy and so, so good!
1 12″ wrap, any kind
1 veggie burger, choose your favorite
handful of feta cheese, about 1/4 cup, diced into small cubes
1 pickle, sliced
handful of arugula
1 small tomato, sliced
1 slice of an onion
spicy mayonnaise, to dress
salt and pepper to taste
This is best as an assembly line so have about four small bowls ready to hold all the ingredients. The recipe is for one burger wrap so multiply as needed.
Slice your tomato and onion and grill both for a few minutes until the onion is browned. The tomato will probably be ready first so have that small bowl ready to hold the juices!
While they are cooking, cut the pickle into thin slices, dice the feta and warm the wrap in the oven. When they are done, cook your veggie burger. I happen to like the regular ones from Trader Joe’s because they do not contain soy. Any of your favorite store-bought burgers would be good too. And homemade would be excellent.
Let the burger cool for a few minutes and begin assembling the wrap.
Place a large handful of greens to anchor the wrap. Arugula is a great choice because it has a bright, peppery flavor. One great thing about summer is there is an abundance of fresh greens and herbs. Add your favorite; this should be to your taste!
Crumble the burger over the greens and add the grilled tomato, onion, feta and pickle slices. The spicy mayo is simply hot chipotle sauce added to plain mayonnaise. Spoon a teaspoon or so over the top, take a big bite and enjoy!
