Today’s Meatless Monday recipe is a quick and easy side dish or starter. Perfect for snacking with sliced radishes, cucumbers or carrots, it would also make a healthy lunch paired with toasted bread and sliced tomatoes or roasted red peppers. No matter how you eat this Spicy Artichoke Hummus it will stimulate your palate!
3 garlic cloves
2 cups garbanzo beans, rinsed (chick peas)
3 artichokes hearts, drained but reserve water
1/3 cup tahini
4 TBS fresh lemon juice
1/2 TSP salt
10 dashes of hot sauce
1 TSP smoked paprika
Roughly chop the garlic and add to food processor. Once the garlic is mixed add the garbanzo beans, artichoke hearts, tahini and lemon juice. Pulse a few times and stop to scrape down the side to make sure everything is incorporated. Pulse again. At this point it may seem a little dry. Take your reserved artichoke water and add a few tablespoons. About three should be enough. Add the hot sauce and paprika. If you are fearful of heat, add half the amount and taste. Continue to pulse a few more times until you like the consistency. It should be smooth with a light chunky texture. It is really to your preference but you can keep checking until you find it just right. Now taste! See if it is hot enough for you. The hot sauce used in this recipe is a jalapeño-based sauce and has a richer flavor than a tabasco. Adjust accordingly.
Hummus is a versatile dish as it can be added to sandwiches and bread for a heartier meal. This would be great in a wrap with tomatoes, cucumbers and greens. Or as a finger food with sliced veggies and crackers. Eliminate the hot sauce for young children and get them to snack on veggies! Enjoy!
